Joshua’s recipe of the day – Snow Flakes Chocolate cookie.

Havering’s finest chef nine year old Joshua Puncheon from Harold Wood, has returned with some very special Christmas lock down recipes;

Snow Flakes Chocolate Cookies (with Salt Flakes)


  • 220 gr dark chocolate, in small pieces
  • 20 gr salted butter
  • 2 large eggs
  • 130 gr sugar
  • 1/2 tsp vanilla extract
  • 35gr Plain Flour
  • 1/4 tsp baking powder

Sea Salt flakes,for sprinkling

In a bowl melt the dark chocolate and butter until silky.

Set aside.
Mix the eggs.
Add the vanilla extract and stir until fluffy for about three minutes.
Gradually add the chocolate and butter mixture to it. Then add the flour.
Finally add the Baking powder and mix for a minute.
Spoon the mixture on a lined tray. It will be quite soft.
Sprinkle with sea salt and bake in preheated oven for 10/12 minutes on 180c.
Let them cool and enjoy! Or wrap them in little bags and give them to friends and family.
