With lockdown hopefully easing off, and people back to work along with the kids going back to school, it’s going to be both a physical and mental challenge to get back to what we called ‘normal’. So to make sure you’re all tip-top, why not try these delicious, super nutrient and vitamin protein balls. Super simple to make, but great for all the family to enjoy.

Ingredients

  • 1 cup of oats
  • 1/2 cup of mixed nuts
  • 4 tbspn honey
  • 2 tpsn peanut butter
  • Dash of vanilla (optional)
  • 2 tbspn of crushed mixed seeds (chia, sunflower, pumpkin, flax seeds)

These amazing little balls are the easiest thing in the world to make, and full of so many nutrients. Much as magnesium, potassium, manganese, vitamins B1 2(thiamine) & 3(niacin), omega 3 along with so many more. Not only will they keep you awake, focused, and energized. But will also help with brain development, regulate your blood sugars. More importantly, these are great for your heart and mind. While also containing a decent amount of protein per ball, as well as fibre which is going to keep you going throughout the day.

Crush the peanuts into a mixer, along with a quarter of the oats, until there all roughly chopped. Place into a bowl and combine all the ingredients together. The vanilla is optional but will give the Protein Balls a sweeter taste. Remember there are no unnatural sugars going into these.

Mix thoroughly then place into a container, and leave for a minimum of three hours, overnight would work the best though. Place some of the mixture into the palm of your hand and roll it into a ball, cover with either coco powder or desiccated coconut. And that’s it ladies and gentlemen, winner winner peanut dinner and there we have it, the super ball that’s going to help us get back to normal and out if this lockdown, happy days indeed!!

Why not mix it up and cover it in different coats or even adding dried fruit and send some pictures of your version of these tasty little bad boys! Enjoy guys!!!
