Joshua’s recipe of the day-Quick easy focaccia.

Havering’s number one junior chef Joshua Puncheon today teaches us how to make a delicious focaccia.

Quick Easy Focaccia
500gr Flour
1 tsp sugar
2 tsp dried yeast
30ml olive oil
350ml warm water
1 tsp fine salt

30 cherry tomatoes, halved
1tsp coarse salt

Step 1

In a large bowl/mixer add the flour.

Step 2

Add the yeast

Step 3

Add the sugar.

Step 4

Add the olive oil.

Step 5

Add the salt.

Step 6

And finally add the warm water.

Step 7

Mix into a dough and leave it to rest in a warm place until doubled in size.

Step 8

When the dough has doubled in size, it’s ready.

Step 9

Prepare a tray with baking paper and brush it with oil.

Step 10

Tilt the dough in the tray oil your fingers and gently stretch the dough.

Step 11

Leave it to rest for 30 minutes.

Step 12

In the meantime chop the cherry tomatoes in half.

Step 13

Add oregano (optional)

Step 14

After 30 minutes place the cherry tomatoes face down in the fingerprints.

Step 15

Sprinkle the rosemary, coarse salt, a splash of water, and a table spoon of olive oil on top.

Step 16

Bake at 220c for 20 minutes.

Step 17

When it’s ready leave it to cool for five minutes.

Step 18

Cut into slices and enjoy!
