Joshua’s recipe of the day-chocolate cookie sandwiches.


Havering’s finest junior chef nine year old Joshua Puncheon from Harold Wood today shows us how to make delicious chocolate cookie sandwiches.

Ingredients
125gr unsalted butter
125gr sugar
1 egg
250gr Flour
Vanilla essence (optional)

Chocolate spread for filling.

Icing sugar to serve.

Step 1

Put the butter into a mixer.

Step 2

Add the sugar

Step 3

Mix until creamy

Step 4

Add the egg

Step 5

Add the vanilla if using.

Step 6

Add the flour and mix until smooth.

Step 7

Wrap tight in cling film and keep it in the fridge for 30 minutes.

Step 8

After 30 minutes remove from the fridge and place on a floured surface.

Step 9

Roll it gently.

Step 10

Cut into shape with a cookie cutter.

Step 11

Bake in a preheated oven at 180c for 15 minutes.

Step 12

Leave them on a rack to cool.

Spread chocolate between the two cookies and enjoy!
